MexiCali Turkey Casserole - 384 calories and extremely easy 2 lb ground turkey browned with one small chopped onion, one small chopped green pepper, 1 Tablespoon chili powder, 1 teaspoon garlic powder, southwest seasoning to taste, add 2 cans diced tomatoes, 1 can dark kidney beans, 1 can light kidney beans 1 3/4 cup water and 2 cups uncooked rice, cover and bake 45-50 minutes at 375 remove and sprinkle with shredded cheddar cheese (I normally dont like ground turkey, but this turned out yummy!)
